We went to the awesome wholesale greengrocer earlier this week and our kitchen is now bursting with delicious fruit and vegetables.

They were selling big boxes of tomatoes for £1 each, so I now have two of those. Now I love tomatoes and in the last day or so have had tomatoes on toast, tomatoes omelet and made chunky tomato and vegetable sauce.

But I'm out of ideas and there's still have many many tomatoes to use. Tomato soup would be the obvious solution, but I don't have a blender, so is that possible to make? Or if you have any other tomato recipes that would be fantastic.

Otherwise I'll be making and freezing enough tomato and vegetable sauce to last for months.

I have no idea what 'chunky tomato' is so I'm not sure if it's the same thing as tomates farcies but have you thought of stuffed tomatoes? I adore that dish.

From what google told me, it'd be basically the same, yes :-) Since I'm sorta rotten at the whole 'recipe translating' thing, I went and found a translation on-line for the whole tomates farcies (http://www.latartinegourmande.com/2006/01/05/tomates-farcies-stuffed-tomatoes/) dish :-) It's best served with rice, btw, it's yummy all around *smacks lips*

Chunky tomato was just me roughly cutting up a load of vegetables, adding herbs, tinned tomatoes, water and making a sauce.

I just went up and googled tomates farcies, and after I finished laughing at how google translated the recipe, no I hadn't thought of that, but it looks and sounds really good.

And again, I actually have the stuff needed, so that may be tea tonight.

Also, another entrée - though I usually only eat that when I do that kind of 'salad' - is tomatoes with mozarella, with olive oil. It's quickly done - obviously as there's nothing to do but, you know, cut the tomatoes and mozarella in slices - it's light and delicious, too :-)

Incidentally, we're fans of dried tomatoes with mozarella in my family but we have the dried tomatoes all ready to be eaten, of course. We don't make them. That is, I don't, but some of my cousins in Italy do.

I'm very much loving these easy but delicious recipes.

I imagine making your own sun dried tomatoes could be complicated, it's so much easier to get them in a jar. But I bet they're nicer home made.

There's always grilled cheese sandwiches with thin slices of them. :D

My MIL grew them this year and has a TON. I can't wait for them to ripen! Next year I'm growing some and some cucumbers (which M absolutely LOVES).

Home grown tomatoes are so good. They have that gorgeous smell and just. Yeah.

Bruschetta! Some recipes says to parboil the tomatoes first, but i totally don't do that. Toast some bread in the oven until the top is crusty, then rub a clove of garlic over it. Chopped tomatoes and basil, (and garlic if you wanted it more garlicky. I do. :P ) and I sometimes use mozzarella or crumply cheese if i have it, and into the oven for a few more minutes until you just have to eat it. YUM.

In fact, I might go make some myself now. ;)

Or, if you have day-old bread where it's already a little hard, you don't have to toast it in the oven first. I just do that, cause when I don't have bread from the bakery, I buy these really cheap vacuum sealed baguettes. :P

It's because there's a lot of MCR stories that kill Mikey off. It's a huge thing, probably because it leads to lots of good Gerard angst.

I changed my journal title when I was reading a fic, and then suddenly, for no reason at all Mikey shot himself in the head at the end. Like you do.

It is. I've eaten a lot of it lately, cause it's so delicious. Hee! Yes, I bought a basil plant, and while it's not super productive, it's persistent, and refuses to die, which I'm pretty amazed by. :P

Without a blender, you can always make soup by pushing the tomatoes through a sieve after you've done the cooking.

1 small carrot, diced
2 celery stalks, diced
1 onion, chopped
1lb tomotoes, quartered
A bouquet garni, or couple of bay leaves if you don't have one
2 cloves
1 tsp sugar
1 pint boiling water or stock

- Fry the onion, carrot and celery in a bit of oil or butter until they start to get soft.
- Add everything else.
- Simmer for 20 min, until everything is soft.
- Sieve the soup into a bowl, squishing the veg through with a spoon.
- Put it back on a low heat.
- If you want the soup thicker, you can thicken it with cornflour or ordinary flour. (Dissolve them in water before you add them, and make sure you let the soup thicken before you all any more.)
- Season with salt and pepper to taste.

Oh, I forgot to mention my dad's tomato salad, which is easy and really tasty:

- Slice the tomatoes (thick or thin, as you prefer), and put them on a plate in slightly overlapping layers.
- Finely chop some onion, and sprinkle it over the tomatoes.
- Sprinkle on some mixed herbs, too.
- Salt and pepper, and you're good to go.

You can add some salad dressing if you like, but it doesn't really need it. We always eat tons of this when we're on holiday in France.

My pa-in-law grows his own tomatoes (oh boy, yes - two greenhouses and a generous bedful of plants besides, he harvests about a ton of the things, I swear) and during the summer practically lives on his truly excellent tomato salad: slice tomatoes, peppers (if you like), spring onion, a bit of basil if you happen to grow it, and pile them into a vast bowl. Add olive oil and vinegar dressing, and a little finely chopped garlic if you like that sort of thing, and leave the vat to marinate for a couple of hours before you eat it. The juice is yummy, and it goes just as well with burgers and mashed potato as with cold meats.

I occasionally make a giant vat of very basic tomato sauce - onions, garlic, dried basil, chopped fresh tomatoes - rto freeze, on the grounds I can add stuff later.

I keep meaning to try oven-roast or dried tomatoes to add to things later, but I mostly just *eat* the tomatoes while they're fresh.

I love fresh tomatoes so much, the problem is there's so many of them they'll go bad before they could be eaten like that. So cooking it is.

Oooh, tomatoes! Very fun. ::grins:: Have you tried making Pico de Gallo? I suppose this recipe depends on if you like salsa, or not, but it's fresh, simple, and totally dependent on how much you actually want to make.

Ingredients:

tomatoes
jalapeños (larger sized for less spice, or smaller for more heat. No asian peppers)
onions (red, or yellow)
cilantro
lime juice
salt

Cut up into bite-sized pieces, place in a bowl, cover it and let the flavors meld in the fridge. Then add chips and eat!

Or! Guacamole! Again, this recipe is totally dependent on how much you want to make. Some guacamole is really chunky, but you'll get a smoother texture and flavor if you smush the avocado really well and then mix things in.

Ingredients:

Avocados
tomatoes
jalapeños
onion (red or yellow)
cilantro
lime juice
cumin (ground)
salt

Mix it all up in a bowl (bite-sized pieces for the non-avocado items), grab some chips and eat!


If it wasn't so hot out, I'd say make a big thing of chili as well! That's a fun tomato-based soup! Or a curry. Or Pad Thai! Those're fun to make.

I haven't tried either of those, and they both sound so good! Plus, as an additional bonus neither are something I'd think of making myself. Yet sound simple to do so. I have nearly all the ingredients too, which is fantastic.

Ahhh yes, what to do with the excess tomatoes :) We grow them every year and we are always looking for more things to do with them. :)

I say a nice caprese salad - just tomato, fresh mozzarella cheese, basil or red onion if you like, olive oil and salt and pepper. Simple but filling and pretty too.

We also like to hollow out tomatoes and stuff them with tuna, chicken, or shrimp salad. Cold stuffed as opposed to hot. Nice for summer days and nights.

...and to tell you the truth? My personal favorite is just the salt shaker and eating the tomato like an apple. *grin*

How ya doin'? How's James? The lad? Haven't been around in a few weeks and I tend to wonder about my LJ pals. :)

Tomatoes are so good, but it seems that you can't get them for ages, and then suddenly there's a excess of them.

That salad sounds so good. Seriously. The stuffed tomatoes sound gorgeous too, like little edible salad bowls.

I'm fine, James not so much. I don't know if you were around at the time but he's had his wrist straightened and has an infection in the wound at the moment. Corey is happy though, off school and sleeping in every day *g*

And what about you? Any news?
