Aug. 16th, 2008 11:23 amWe went to the awesome wholesale greengrocer earlier this week and our kitchen is now bursting with delicious fruit and vegetables.
They were selling big boxes of tomatoes for £1 each, so I now have two of those. Now I love tomatoes and in the last day or so have had tomatoes on toast, tomatoes omelet and made chunky tomato and vegetable sauce.
But I'm out of ideas and there's still have many many tomatoes to use. Tomato soup would be the obvious solution, but I don't have a blender, so is that possible to make? Or if you have any other tomato recipes that would be fantastic.
Otherwise I'll be making and freezing enough tomato and vegetable sauce to last for months.

Also, another entrée - though I usually only eat that when I do that kind of 'salad' - is tomatoes with mozarella, with olive oil. It's quickly done - obviously as there's nothing to do but, you know, cut the tomatoes and mozarella in slices - it's light and delicious, too :-)
Incidentally, we're fans of dried tomatoes with mozarella in my family but we have the dried tomatoes all ready to be eaten, of course. We don't make them. That is, I don't, but some of my cousins in Italy do.

2 celery stalks, diced
1 onion, chopped
1lb tomotoes, quartered
A bouquet garni, or couple of bay leaves if you don't have one
2 cloves
1 tsp sugar
1 pint boiling water or stock
- Fry the onion, carrot and celery in a bit of oil or butter until they start to get soft.
- Add everything else.
- Simmer for 20 min, until everything is soft.
- Sieve the soup into a bowl, squishing the veg through with a spoon.
- Put it back on a low heat.
- If you want the soup thicker, you can thicken it with cornflour or ordinary flour. (Dissolve them in water before you add them, and make sure you let the soup thicken before you all any more.)
- Season with salt and pepper to taste.

Date: 2008-08-16 11:01 am (UTC)- Slice the tomatoes (thick or thin, as you prefer), and put them on a plate in slightly overlapping layers.
- Finely chop some onion, and sprinkle it over the tomatoes.
- Sprinkle on some mixed herbs, too.
- Salt and pepper, and you're good to go.
You can add some salad dressing if you like, but it doesn't really need it. We always eat tons of this when we're on holiday in France.

tomatoes
jalapeños (larger sized for less spice, or smaller for more heat. No asian peppers)
onions (red, or yellow)
cilantro
lime juice
salt
Cut up into bite-sized pieces, place in a bowl, cover it and let the flavors meld in the fridge. Then add chips and eat!
Or! Guacamole! Again, this recipe is totally dependent on how much you want to make. Some guacamole is really chunky, but you'll get a smoother texture and flavor if you smush the avocado really well and then mix things in.
Ingredients:
Avocados
tomatoes
jalapeños
onion (red or yellow)
cilantro
lime juice
cumin (ground)
salt
Mix it all up in a bowl (bite-sized pieces for the non-avocado items), grab some chips and eat!
If it wasn't so hot out, I'd say make a big thing of chili as well! That's a fun tomato-based soup! Or a curry. Or Pad Thai! Those're fun to make.

Date: 2008-08-17 02:08 am (UTC)I say a nice caprese salad - just tomato, fresh mozzarella cheese, basil or red onion if you like, olive oil and salt and pepper. Simple but filling and pretty too.
We also like to hollow out tomatoes and stuff them with tuna, chicken, or shrimp salad. Cold stuffed as opposed to hot. Nice for summer days and nights.
...and to tell you the truth? My personal favorite is just the salt shaker and eating the tomato like an apple. *grin*

I'm fine, James not so much. I don't know if you were around at the time but he's had his wrist straightened and has an infection in the wound at the moment. Corey is happy though, off school and sleeping in every day *g*
